This cheesy Italian-inspired pasta casserole might just become your favorite comfort food. What is pasta casserole?

The word “casserole” can be used for any meal that is baked in one single baking dish. A pasta casserole is exactly what it sounds like—a pasta dish of baked pasta. Usually a pasta casserole will incorporate eggs and milk or ricotta to thicken up the dish. This delicious and nostalgic version is sure to be added to your go-to favorites for easy entertaining.

16 ounces of penne or favorite pasta

1 tbsp minced garlic

2 tbsp olive oil

1 tbsp dried basil

12 ounces marinara sauce

12 ounces Alfredo sauce

8 Oz baby spinach, chopped

2 cups of grated Bella Rosa Parmesan

1/2 cup of shaved Bella Rosa Parmesan (for topping)

2 cup whole milk ricotta cheese

1 cup mozzarella cheese

3 large eggs

Salt and pepper to taste

Directions:

  1. Cook pasta according to package, drain and put back in pot

  2. Preheat oven to 425 degrees and spray a 9x13 baking dish with non-stick spray and set aside

  3. Sauté the garlic in the olive oil over medium heat for a minute then add your chopped spinach in to sauté as well

  4. While spinach is sautéing, In a mixing bowl, mix ricotta , eggs, parmesan, mozzarella, dried basil, salt, and pepper and combine together

  5. Add sauteed spinach, marinara sauce and Alfredo sauce to the pot with the pasta and combine

  6. Then spread a layer of noodles on the bottom of your 9x13 dish, top with a layer of the ricotta mixture and repeat

  7. Top with shaved Bella Rosa parmesan and bake for 15-20 minutes until bubbly
